What is Atlantic Lobster?

Atlantic Lobster (or American Lobster) are the largest crustaceans in the world and are found along the Northeastern coast of North America. They are wild caught using lobster traps which are wooden and wire traps submerged on the seafloor. The traps attract lobster with bait and capture them live. Organic Ocean Atlantic Lobster is Canadian lobster sourced from Nova Scotia.  While lobster is often cooked whole, live or served as a tail in shell, our lobster uses a high pressure processing (HPP) method which is one of only two methods approved by PETA and WWF for processing lobster. This method also helps loosen the connective tissues of the meat which results in a “melt-in-your-mouth” and tender taste experience rather than tough or chewy. Our lobster presentation is unique and is called split. The claw’s have been removed and the lobster has been split in half. The body cavity has been cleaned and half tail, claw and knuckle meat is placed back within the half body shell (split).

How to cook Atlantic Lobster Split

For best results, pierce vacuum pack and thaw overnight in refrigerator. Organic Ocean Atlantic Lobster Split is highly versatile and can be baked, grilled and broiled right in the shell. For recipes that ask for lobster meat, remove the meat from shell and simply butter poach until done.
